Step 1Preheat a grill or broiler to high heat.

Step 2Slice the baguette into 1cm-thick rounds and brush both sides with olive oil.

Step 3Grill or broil the bread until golden and crispy, about 2 minutes per side.

Step 4Dice the tomatoes finely and combine with garlic, basil, and a drizzle of olive oil.

Step 5Prepare the firm tofu by seasoning and cooking until done.
