A delicate South Indian vindaloo of braised lobster nestled with aromatic garam masala and sweet jaggery.

Step 1Marinate the lobster tail in vinegar, garlic, ginger, chili powder, and cumin for at least 2 hours.

Step 2Sauté onion and mustard seeds in oil until the seeds pop and the onion softens.

Step 3Add the marinated lobster tail and brown on all sides.
