A comforting Traditional tagine built around tender steamed squid and aromatic dried apricots.

Step 1Heat olive oil in a tagine or heavy-bottomed pot over medium heat.

Step 2Sauté diced onion until soft, then add garlic and ginger.

Step 3Add the squid and brown on all sides.

Step 4Stir in saffron, cinnamon, cumin, and preserved lemon.

Step 5Add olives and enough water to come halfway up the squid, then cover and simmer for 45-60 minutes until tender.

Step 6Serve directly from the tagine with crusty bread or couscous.
