An authentic Royal doro wat with stir-fried salmon balanced with notes of shiro powder and nigella seed.

Step 1Slowly cook diced onions in a dry pot until deeply browned, stirring frequently, about 20 minutes.

Step 2Add niter kibbeh and berbere spice, cooking for 5 minutes until very fragrant.

Step 3Add garlic and ginger, stirring for 2 minutes.

Step 4Add the salmon fillet and cook, turning occasionally, for 30-40 minutes until fully tender.

Step 5Nestle hard-boiled eggs into the stew and simmer for another 10 minutes.
